In hindsight, you should've gone back to this firm HR when you got assessment internship opportunity and forced an answer by disclosing you've to give an answer in other firm.

I mean looking at the current job market, I get OP’s frustration and he’s understandably desperate for that one opportunity and since he’s not from a tier-1 institute, the frustration simply just amplified!
Why would you fumble an assessment internship in this job market without an offer letter in hand?
I interned with them last year during my summer break for 2 months! I liked the place and the work they were doing!

Would have been a great place to start off my career!

Don’t worry, man, this happens to everyone who tries. Including your top NLU folks. Keep going, something will click. These places are always shady and the HR is usually garbage and acts more like an obstacle to good hiring.
If the HR has asked you to explore other options, it means that they don’t want to hire you for the time being. Since it is not an outright no, they also want to keep the option of hiring you open if circumstances change and there comes a business need to hire you.
