Problem with Delhi chaat is that it has become standardised - golgappe taste same everywhere, aaloo tikki tastes same everywhere, even the chhole of chhole bhature (whose taste should vary from cook to cook) also taste same everywhere
Problem with Mumbai chaat is that it reminds you of poverty and convenience - the samosas are half fried and appear malnourished given the tiny amount of masala in it, bhel puri tastes good - but it tastes good everywhere (including Delhi), vada paav gives constipation
chaat is the lowest level of culinary invention, there is no application of brain, mixing random things and it tastes only moderately good, have people forgotten Thai, russian, Italian and Ugandian cuisine already, the detailed and meticulous culinary expertise these dishes require is blowjobling
You should just know where to eat from and when to eat. Don't complain if you eat from the most unhygienic and disgusting place of mumbai.
