If you want to make decent money in a start-up (unicorn or otherwise) and have a more interesting profile, then join after getting a little experience (4-5 PQE is my recommendation, but even upto 8-10PQE can work with some of the larger start-ups.
Your growth and learning won't be as much in a company as a law firm or your own independent practice (although a law firm path will usually give your more openings in start-ups).
